Prickly Pear Strawberry Sorbet That is Packed With Flavor and Health
This strawberry sorbet uses fresh strawberries and prickly pears.

Prickly Pear Strawberry Sorbet
This is really delicious and the color is just vibrant! My youngest kids gobbled it up in no time.
You really should get to know a little about the prickly pear too. It's a very interesting fruit that grows on the nopal cactus, which is known for it's health benefits.
It grows in the southwestern United States and Mexico, but is now being grown in other parts of the world because of it's health benefits. The whole plant is edible - the flat green pads and the prickly pear fruit. (Just don't try to eat the skin or the needles. OUCH!)
The Mexican name for it is tuna. (I love it so much that I planted one in my back yard this year!)
Ingredients:
- 3 prickly pears (I use the red/purple ones)
- 1/2 cup granulated sugar
- 2 1/2 cups fresh sliced strawberries
- 1 tsp.lemon juice
Health Benefits Of the Prickly Pear Cactus: (There may be some that I have not listed.)
It is thought that they can:
- Aid in digestion and colon health
- Help to regulate blood sugar levels
- Strengthen the immune system
- Help keep the heart healthy by reducing cholesterol
- Reduce inflammation in the body
- Aid in weight loss and weight management

Directions:
Puree the strawberries. Strain out the seeds over a bowl. Peel off the skin of the prickly pears and push through a strainer over the same bowl. (You will see that the prickly pear has bigger seeds.)
Add the sugar and lemon juice. Mix, then chill in the refrigerator for a few hours or overnight.
Freeze according to your ice cream maker. This will be more firm than homemade ice cream when its done. So, feel free to eat it right away or place it in a freezer container for later.
