30 Second Soy Strawberry Ice Cream

adapted from Vitamix.com recipe

This is an excellent tasting soy ice cream. The soy flavor is hardly noticeable, which is great if you are accustomed to regular ice cream but have developed lactose intolerance or food allergies.

Ingredients:

1/2 cup soy milk

1/4 cup granulated sugar or splenda

2 cups whole frozen strawberries

1/4 tsp. vanilla extract

Put the soy milk in first. Add the frozen strawberries, sugar, and vanilla. With the lid securely on, turn the variable speed up to 10, then flip the switch to high speed.

Use your tamper to push the strawberries into the blades.

The sound of the motor will change and 4 mounds will appear when done.

Turn off the vitamix immediately to prevent melting.

Enjoy eating your healthy ice cream.
