I found this article today about research that is being done to create a healthier ice cream by adding fiber and other nutrients to it. http://www.betterhealthresearch.com/news/ice-cream-is-getting-a-healthy-fine-tuning-19474749/ Want my honest opinion? This reminds me of what they do with our bread. They take out all the nutritious parts of wheat and add some of it back in along with other nutrients. What for, when they could just use the whole wheat berry to make a more natural whole food? This adding nutrition to ice cream makes no sense. Why can't they just start with healthier ingredients if they want a healthier ice cream? Who wants factory processed health anyway? Not me. If I want healthy ice cream, I'll make sure it starts with healthy ingredients like in my own recipes.

My Thanksgiving Surprise

Sometimes it's the little unexpected things that jump starts your heart with gratitude. That was my experience today as I was in the freezer section of a Food-4-Less grocery store selecting popsicles for a feverish child waiting at home. As I browsed through the store, I realized I hadn't planned any Thanksgiving dessert for this daughter who can't have pie or any of the traditional Thanksgiving desserts our family eats. She has many food allergies including wheat, dairy, and nuts. So there I was racking my brain trying to decide if I should try to make a crustless, eggless, and dairy free pumpkin pie with some coconut milk and pumpkin puree or just make rice crispy treats with her margarine.(something I know she likes)I settled on rice crispy treats as I placed the popsicles into my basket. Suddenly, something in the freezer caught my eye. I couldn't believe it! Were my eyes playing tricks on me? No...they were actually there - shelves full of Purely Decadent pint sized soy ice creams and made with coconut milk ice creams that my daughter only gets to have occasionally when we drive an hour to Whole Foods. (We have to help her eat it all on the way home before it melts. ) I was so excited that she would be able to have her very own pint of ice cream on Thanksgiving and not have to share it out of fear of it melting. I asked for the manager and expressed my thanks to whomever was responsible for ordering the ice cream. I could tell by the look on customer faces that my excitement was a little out of the ordinary. It didn't bother me at all. I was just full of gratitude for something as simple as ice cream to make my daughter's Thanksgiving special. I wish all of you the very best Thanksgiving too!
