Coconut Ice Cream That Makes
Coconut Lovers Cuckoo For More.

This coconut ice cream was made with the following recipe.





Use a 2 Qt. ice cream maker or cut the recipe in half for smaller ones.


Ingredients:

1 pint heavy cream

1 - 14oz. can coconut milk

1 1/8 cups granulated sugar ( you can use less sugar- the full amount ends up very sweet)

1 tsp coconut extract

1/3 cup sweetened flaked coconut



Instructions:

Put the coconut flakes into a food processor to grind into smaller pieces. Set aside.

In a bowl, mix together cream, coconut milk, sugar, and coconut extract. Let sugars dissolve.

Pour into your ice cream maker and freeze according to the instructions. (Usually for about 25 minutes)

Add the coconut flakes during the last 5 minutes. Transfer to freezer containers. Let harden in freezer until easily scooped. (about 2-3 hours)
