Cinnamon Ice Cream - Custard Style
This cinnamon ice cream is rich and creamy and waiting to be eaten with any warm old fashioned dessert you can think of.
Healthy Cinnamon
Did you know that cinnamon is very healthy for you? I knew it had some health benefits, but I didn't realize what they were or how beneficial cinnamon is in our diet. It's great when something that tastes so good is good for you too.
Here's a few health benefits that I recently learned.

Okay, back to the cinnamon ice cream recipe!
Ingredients:
2 1/2 cups heavy cream or whipping cream
1 1/2 cups whole milk
1 1/4 cups granulated sugar
6 egg yolks
1 1/2 tsp. vanilla extract
1 1/2 tsp. ground cinnamon (A wonderful resource for cinnamon and other spices is
Penzeys Spices.)
Directions:
Heat milk and cream in a pot on the stove (med.low heat).
Using a mixer or a whisk, mix together (in a bowl) the sugar and eggs yolks.
Stir 1 cup of the hot cream and milk into the bowl of sugar and egg yolks in a steady stream with the mixer or whisk.
Add the contents of the bowl and the ground cinnamon to the pot on the stove and continue to stir until it thickens.
Strain the mixture into a bowl and stir in vanilla. Cover with plastic wrap and let cool a little (you could put the bowl into an ice bath to expedite the cooling process.) Chill in the refrigerator.
When it's cold, stir well, and pour into the ice cream maker. Freeze according to the directions for your machine. Usually takes 25 minutes.
Serve immediately if you like it soft. Or, if you like to scoop your ice cream, put it into containers and freeze for a couple of hours or until hardened.
I bet this homemade ice cream recipe would be great on a warm piece of apple pie, crisp, or peach cobbler. (My mouth is watering.)
